Good evening guys!

I wanted to share with you a quick meal that we do occasionally and we love because it's so easy to make.We love hillshire farm smoked sausage so we use it to add a kick to what could be a ordinary salad into an extrodinary salad.

Serves 2-3 people

Begin with a bowl of Romain lettuce. Add in a handful of croutons. Take half of a tomato and dice it. Add some Colby jack cheese and a tea spoon of olive oil.

Boil your smoked sausage for 10 mins over a low flame. One boiled cut into slices and then cut each slice in half. Toss on top of the salad and mix well.
This is an easy meal that is a good source of protein and able to be made in under 30 mins. It's sure to be a hit.

My best furfriend Kami #Sponsored, #MC, and #NutrishforCats #BFF Review & Giveaway

I participated in an Influencer Activation Program on behalf of Mom Central Consulting  for Nutrish for Cats. I received a sample of Nutrish for Cats to facilitate this review and a promotional item to thank me for participating.
My best furfriend Kami #Sponsored, #MC, and #NutrishforCats #BFF Review & Giveaway

I guess alot of people adopt a cat thinking they will save the poor animal in my case adopting a cat didn't actually save my life but it healed a broken heart and a lonely soul. I'm a shy creature and moving from four thousands miles away with just with my husband was really hard. I missed my friends but mostly I missed my noisy and annoying family to the point it actually hurt. The long hours my husband works/ed didn't help and losing my mom to cancer (which we found after she past away)  and not being able to hold her just broke my spirit. My husband was not a cat lover and we weren't sure if a pet (dog) was in our budget nor if our landlord  would allow it. How Kami found her way to my house is a cute story that might need her own post. The day she came home she was covered in mud and fleas. She was so tiny  she could sleep in my hand, needless to say my husband and I felt for her in a second. After her first shower  we could all see she was a lovely silver mackerel tabby.

I'm not a fan of coffee but I do enjoy drinking a good Turkish coffee, a espresso or plain coffee and milk with pastries, cake, muffins and my favorite banana bread.

Lazy Grounded Beef Empanadas (Recipe)

Lazy Grounded Beef Empanadas (Recipe)

The empanadas were first originated in the Middle East and are known as "Fatays", with the conquer of Spain and the culture exchange between both countries, a great variety of new dishes was created, the empanada was one of them. These delicious pastries are one the most popular latino dishes: every country has their own recipe, ingredients, sazón and secrets, yet they are basically just buttery dough and potato, meat (beef, chicken, pork, cheese, etc) filling. The empanadas can be also a dessert if they have a sweet filling (Dulce de leche/caramel, fruit jams, ricotta or pumpkin pie filling).

For the last 3 months I was craving some empanadas and once I left behind my laziness I made some super easy ones and I wanted to share my own version, Warning: it's a lazy variant, with less ingredients and designed for newbies cooks, it's fail proof. You will need:

yummy rainbow cheesecake

Rainbow Cheesecake

Yummy is all i can say! makes me want to go to the kitchen right now!

here is the original!

yummy!!!

Ingredients

* 2 Cups graham crackers, crushed (crust)
* 2 Tablespoons sugar (crust)
* 6 Tablespoons unsalted butter (crust)
* 1/2 Teaspoon Cinnamon (crust)
* 1 Pinch Salt (crust)
* 2 Pounds Cream cheese, room temp
* 1 1/3 Cups Sugar
* 2 Teaspoons Vanilla
* 4 Large Eggs
* 1 Cup Sour Cream
* 1 Cup Heavy Cream
* 1 Pinch Salt
* 1 Container Food colors (blue, yellow, green, red)

Directions

1. 1Before you get started with the crust, make sure your springform pan is water tight. I do this by carefully wrapping a few layers of foil on the outside of the pan, working in both directions so water cannot get into the pan. Be careful not to rip the foil or water will get into your cake and ruin it!
2. 2To make the crust, grind the graham crackers in a food processor until very fine. Then mix crushed crackers, salt, sugar, and cinnamon together in a bowl. Then mix in butter with your clean fingers.
3. 3Press all but a few tablespoons of the graham cracker mixture into the prepared springform pan. (Save a bit of the crust mixture in case there are holes later) Press it down firmly in the pan. I like to use a measuring cup for this which makes it easy to get around the edges. You should have an even, flat crust.
4. 4Bake the crust in a pre-heated 350 degree oven for 10 minutes on a low rack. Remove from the oven and cool completely before continuing. Turn oven temp down to 325.
5. 5To make filling, cut cream cheese into pieces and add to a mixing bowl. Whip until smooth, maybe 4 minutes. Then add sugar and continue to beat until smooth again, another 4-5 minutes. Next, add salt, vanilla, and one egg at a time, beating briefly between each egg. Finally, beat in the sour cream and heavy cream.
6. 6Once the mixture is well combined and very smooth, divide it into 6 dishes. Add food coloring to each dish to get the desired colors.
7. 7Pour colored mixtures into prepared dish with cooled crust. Start with red and pour it right in the center. Continue to build the rainbow by pouring the fillings directly in the center. This will create layers so that each slice has some of each color.
8. 8Place cheesecake into a baking dish a fill with boiling water about 1 inch up the side of the springform pan (pray that your dish is waterproof).
9. 9Bake at 325 degrees in the water bath for one hour and 45 minutes.
10. 10Turn off the oven, crack the door to the oven, and let the cake cool in the oven for one hour. The slow cooling will help it not crack.
11. 11Then loosely wrap the dish in foil so the foil isn't touching the top of the cake and refrigerate for at least 4 hours.
12. 12When ready to remove cake, run a clean narrow knife around the edge of the dish, remove the foil, unlock the spring, and carefully lift off the outer ring.
13. 13Serve either alone or with a cherry/raspberry sauce. It's so rich and creamy that it really doesn't need a topping.
